Esses de Azeitão are compact biscuits of flour, sugar, butter, eggs and cinnamon, shaped by hand into the letter that gives them their name. They are light brown, with a rustic, faintly cracked surface and a dry, firm crumb. The first bite is hard and crisp; the biscuit then breaks down and releases a pronounced cinnamon aroma.
The shape should not look factory-perfect: each rope of dough is curved in two directions to draw a thick S. They keep well and accompany coffee, tea or Moscatel de Setúbal.

Pastelaria Regional Cego, founded in 1901, is identified by Setúbal municipality and RTP as the birthplace of Esses de Azeitão. Family history points to Teresa, wife of Manuel Rodrigues—the blind man who gave the shop its name—and their daughter Albina, who were already baking them in the early twentieth century. In 2019, Cego's Esses were among Setúbal district's seven finalists in the Seven Wonders of Portuguese Sweets. Other artisan producers now exist, including Doce da Bina, whose version is qualified under the Portugal Sou Eu programme.
