Coininhas are small individual cakes, pale and lightly golden, baked in paper cases. Their mixture combines Azeitão sheep's-milk requeijão, sugar, almonds and egg yolks. The cake stays low, soft and moist, with a fine almond surface and a glossy centre in which fresh cheese balances the richness of yolks.

Preparation takes about an hour. Ingredients are incorporated gradually and the cakes bake slowly at low temperature in a stone oven. This avoids a hard crust and preserves the delicate texture that separates Coininhas from firmer cheese tarts.

History

Andréia and Agnaldo Borba created Coininhas in 2009, naming them for Coina, where they later opened Confeitaria Santa Coina. The recipe channels the authors' experience into a combination of regional products, above all Azeitão sheep's-milk requeijão. On 4 September 2021, Coininhas won the Sweets category of the Seven Wonders of New Gastronomy by public vote, after a competition that began with 1,147 entries. They therefore became one of that edition's seven national winners.
