Pudim de Nozes do Convento de Jesus de Setúbal was made by Santa Coina Confeitaria and entered the Spoon-and-Slice Sweet category of the 2019 Seven Wonders of Portuguese Sweets. Setúbal and Barreiro municipalities confirm the product, maker and participation.
Open sources identify walnuts through the name but publish no complete ingredient list, quantities, form, texture, technique or yield. This record therefore does not turn a commercial designation and a recovery account into an invented formula.
- Walnuts, indicated by the product name
- Remaining composition unpublished
The reviewed sources publish no verifiable sensory description beyond its identity as a walnut pudding.
Do not confuse the commercial recreation entered in the Seven Wonders in 2019 with the creative recipe of the same name that won Setúbal’s “Typical Sweets” competition in 2023.
Production by Santa Coina Confeitaria is documented in 2019. Confirm the establishment’s current status and the pudding’s availability before visiting.
No traditional pairing was established in the reviewed sources.
In July 2019, O Setubalense reported that Santa Coina’s manager had found the recipe in a book about the history of the Convent of Jesus and recreated it for the competition. The report identifies neither the book, page, transcription nor chain of transmission. The interviewee herself said the original date was unknown and presented a pre-1750 origin only as a probability.
The product won the Setúbal district heat in 2019, a fact confirmed by municipal sources. The age of the formula and its convent authorship nevertheless remain unproven. A pudding that won a municipal innovation competition in 2023 is a different creation and does not prove this recipe.
