Pastel da Fidalga is an individual, round, open pastry, instantly recognisable by the exceptionally fine shell rising in irregular folds like a crown. At its centre sits a moist, glossy filling based on eggs, almonds and sugar, baked golden and marked with small caramelised spots.
Contrast defines it: the tall points break lightly while the heart remains dense, tender and rich. The full commercial formula belongs to its creator, but the three structural ingredients are publicly documented and its appearance can be verified in imagery published by the destination and Seixal outlets.

The award-winning recipe is an identified creation and retains its open crown form. It may be served plain or, in restaurants, accompanied by artisan coffee ice cream.

Chef Dina Oliveira created Pastel da Fidalga in 2018 to give Seixal a sweet connected to its local memory. Its name and story refer to Quinta da Fidalga and D. Maria Bernardina de Sousa, whose thwarted 19th-century love story inspired the pastry's identity. It is therefore an openly contemporary creation — not an old convent recipe presented as a rediscovery.
Adoption was swift. The sweet became available at local venues and incorporated into visitor itineraries, winning gold medals at Portugal's National Traditional Rich Confectionery Competition in 2019, 2021 and 2023. Seixal's municipal bulletin also recorded this recognition, giving it an institutional basis beyond the producer's own promotion.
