Morgado do Bussaco is a round cake built from alternating layers of thin walnut discs and egg-yolk sweet. Its batter contains no wheat flour: whipped whites, sugar, honey—preferably heather honey—and walnut flour are baked as separate circles.
During assembly, each disc receives a generous layer of golden cream made from yolks, whole eggs, sugar and water. More yolk sweet, walnut halves and powdered sugar cover the top. The result is dense and soft yet distinctly crisp.

The number and thickness of layers vary. The reference recipe recommends heather honey and exclusively walnut flour, while retaining some production details as trade secrets.

The Coimbra Region Gastronomic Charter connects the Morgado's origin with the pastry kitchen of the Bussaco Palace Hotel. Paul Bergamin, a Swiss cook and pastry chef established at Pampilhosa from 1882, extended his work to Bussaco and employed the German Conrad Wissmann among his collaborators.
In the 1930s and 1940s, Conrad and his niece Emilie Wissmann created several fine-pastry recipes for the Palace. Regional research credits them with the Morgado do Bussaco, which then passed to later pastry chefs. Mealhada entered it in the Seven Wonders of Portuguese Sweets competition in 2019.
