Ingredients

  • 6 Egg whites
  • 120 g / 4.2 oz Sugar for the discs
  • 150 g / 5.3 oz Honey, preferably heather honey
  • 100 g / 3.5 oz Walnut flour
  • 15 Egg yolks for the filling
  • 2 Whole eggs for the filling
  • 500 g / 17.6 oz Sugar for the filling
  • 150 ml / 5.1 fl oz Water

Method

  1. Heat the oven to 180 °C / 356 °F and line a tray with baking parchment.

  2. Whip the six whites to stiff peaks. Add 120 g sugar and 150 g honey; gently fold in 100 g walnut flour until homogeneous.

  3. Spread the mixture into circles on the tray. The source gives no diameter, thickness or number of discs. Bake for ten minutes and leave to cool.

  4. For the filling, boil 500 g sugar and 150 ml water to pearl stage.
