Arroz Doce do Baixo Mondego turns the floodplain's defining ingredient into dessert: Carolino rice grown in the Mondego fields is slowly cooked with Gândara milk or milk from local producers until each grain is wrapped in a soft white cream. Sugar, salt, lemon peel and a cinnamon stick complete the recipe; ground cinnamon traces the served surface.
In Meãs do Campo it is presented in large earthenware dishes and individual bowls, with the rice clearly visible and cinnamon arabesques or lines on top.
