Filhoses de Loures are wheat-dough fritters associated with Carnival in Lisbon's Saloia countryside. The municipal orange-filhó recipe adds orange juice, aguardente, lard and eggs to flour; the dough is kneaded thoroughly, rested, flattened into small portions and fried before being coated with sugar and cinnamon.
These are hand-shaped dough fritters, not spooned batter or pumpkin rings. Aguardente and orange provide fragrance, while lard helps produce a tender centre beneath the irregular golden surface. They are layered on a platter while still warm, each layer dusted with cinnamon sugar.
