Bolo das Alhadas is a round sweet bread from the parish of Alhadas in Figueira da Foz. Flour, sugar, eggs, lemon, fat, cinnamon, yeast, liquid and salt form an enriched dough. The Leonor dos Bolos bakery's commercial formula remains secret.
The Gastronomic Charter of the Coimbra Region separately publishes a version common in many parish households: 1 kg flour, 300 g sugar, five eggs and either butter or olive oil, risen and baked in a wood-fired oven. That household formula documents the tradition without claiming to reproduce the commercial secret.

Gently sweet, with lemon and cinnamon fragrance and an enriched-bread crumb; the selected fat shifts its profile between butter and olive oil.
The Leonor dos Bolos formula remains secret. The Gastronomic Charter's household version allows either 50 g butter or 100 ml olive oil and either warm water or milk, explicitly distinguishing it from the family's commercial recipe.

The cake is documented by at least 1941: the Gastronomic Charter of the Coimbra Region reproduces a description by Cardoso Martha from that year, already presenting it as famous among people in Figueira. The commercial lineage that later strengthened its reputation is tied to Catarina Leonor Lopes Silva, known as Leonor das Alhadas or Leonor dos Bolos. After her death, her niece Maria do Céu Oliveira and a small team maintained its manual production and family transmission for decades. Leonor therefore preserved and popularised an older tradition; she is not presented as the cake's inventor.
