Palmela's Arroz Doce com Leite de Ovelha begins with carolino rice but replaces cow's milk with whole sheep's milk and finishes with sheep's butter. The result is denser, richer and creamier, with a more persistent dairy note. The milk is infused with cinnamon, lemon and orange and added gradually to pre-cooked rice; sugar and butter are folded in off the heat.

It is served in a shallow dish and dusted with cinnamon. In Palmela's tourism imagery, the cinnamon leaves the sword-cross of the Order of Santiago in negative space, recalling the town's centuries-old connection to the military order once headquartered at the castle.

History

The Confraria Gastronómica de Palmela created the recipe around two decades ago for the Cheese, Bread and Wine Festival, to promote whole milk from Arrábida sheep—the same milk used for Azeitão DOP cheese. It was already appearing at municipal food events in 2009 and became a regular local restaurant specialty. In 2019 it was one of Setúbal district's seven finalists in the Seven Wonders of Portuguese Sweets. In 2025 the municipality taught it again in a workshop with chef Marta Nunes, documenting a complete recipe using Saloia sheep's milk and butter.
