Pinha d’Ouro is an individual pastry with an unusual architecture. A low oval nougat base displays pine nuts bound in golden caramel. Above it rises a pale rosemary-flavoured meringue, piped in irregular overlapping rings that narrow toward the top to reproduce a pine cone. Toasted edges define each layer.

The contrast is deliberate: the base is crisp, dense and resinous, while the crown is light and brittle. Pine nut and rosemary translate the municipality's stone-pine landscape into pastry.

History

The pastry was created by Padaria e Confeitaria Salinas in Carregal do Sal. It was elected the official sweet of the 2019 Pine Cone and Pine Nut Fair, an event devoted to stone pine and pine-nut products. The Viseu Dão Lafões intermunicipal tourism guide documents the producer, pine-cone form, pine-nut nougat base and rosemary flavour.

Also in 2019, Pinha d’Ouro reached the public-vote list of 140 Seven Wonders of Portuguese Sweets nominees in the Innovation category and became one of Viseu district's seven representatives.
