Peles de Leitão from Loriga are broad, pale, irregular wheat biscuits with smooth surfaces marked by blisters, folds and cracks. Wood-fired baking dries the dough until very crisp and browns only some edges.
Their name describes the wrinkled, crackling-like appearance; the sweet contains no meat or suckling-pig products.

Gentle, mildly sweet and very crisp, with restrained wood-oven toastiness.
Size, blistering and colour vary naturally with each artisan batch.
At Loriga bakeries and Serra da Estrela regional-product shops.
Coffee, tea or milk.
Loriga's cereal tradition and ovens sustained local bread and biscuit production. Peles de Leitão, also called Loriga-style biscuits, were nominated for the Seven Wonders of Portuguese Sweets in the Biscuits and Dry Cakes category and continue to be made in the town.
