Pastéis de Mós are small pastry discs: a low, straight-sided circular shell holds a smooth egg-and-almond filling baked to a finely mottled orange-gold. The shape is not decorative by chance. It evokes a stone millstone—the object that turns grain into flour and the image embedded in the very name of Porto de Mós.

Flour, eggs, sugar and almonds are the disclosed ingredients; the proportions and process remain the house secret. The municipal tourism account describes a process of roughly six hours, with the pastry rolled and shaped by hand and the filling allowed to become completely cold before it meets the shell.

History

This is a contemporary creation by Pastelaria Portomosense, conceived in the mid-2010s to give the town a portable signature sweet. The project deliberately adopted the name, circular form and tones of local stone as elements of identity. In 2019, Pastel de Mós was chosen as one of Leiria district's seven representatives in the Seven Wonders of Portuguese Sweets after appearing on the national list of 420 nominees. The specialty remains associated with its originating bakery and appeared at the 2025 Porto de Mós Sweets and Flavours Fair and at promotional events beyond the region.
