Painho Sponge Cake

Pão-de-Ló do Painho is a round sponge made with eggs, abundant yolks, sugar and little flour. Its top crust turns brown and lightly wrinkled while the crumb remains yellow, fine, moist and tender yet firm enough to slice.
It is traditionally sold wrapped or protected in baking paper, without icing or filling.

The local producer also makes variants, but the original retains its simple egg, yolk, sugar and flour formula.

Painho, in Cadaval municipality, has made its sponge cake a recognised product of Portugal's Oeste region. Production associated with the Ti Piedade name has maintained the speciality for decades, and local guides identify it explicitly as Pão-de-Ló do Painho. Around Montejunto it has also been known as a harvest-time sweet.
