Paimogo is a small Lourinhã cake made with egg yolks, finely ground almonds, sugar and vanilla essence. It is shaped like a truncated cone, roughly 5.5 centimetres across the base, 2.5 centimetres high and around 50 grams.
Its surface bakes yellow-brown while the centre remains creamy and pudding-like. Traditional preparation allows it to keep this texture for three weeks to a month; it is sold singly or in boxes of six, wrapped in fine paper.

Creamy and rich in yolk and almond, with clear vanilla aroma and a toasted top.
Its truncated-cone form, creamy centre and vanilla define the sweet; small differences come from almond grinding and baking.
At pastry shops and regional-food stores in Lourinhã and Praia da Areia Branca.
Espresso or Lourinhã DOC brandy.
Unlike many Portuguese sweets, it did not originate in a convent. Confectioner Zélia Fortunato Pereira created it from her own experience and imagination, naming it after Paimogo beach and fort on the Lourinhã coast. The foundational source, published in 2001, said it had been created 'about 40 years' earlier, pointing approximately to the 1960s; this is relative dating, not an exact documented year.
