Nevão da Covilhã is a long individual pastry made from a soft golden yeasted dough, folded to leave a lengthwise opening across the top. Coconut is its leading flavour and a gentle egg cream fills the centre. A generous, irregular layer of powdered sugar covers the surface like snow on the mountains.

Regional product photographs show rectangular or faintly tapered pieces about three times longer than wide, with a deeply browned crust and yellow cream visible near the fold. It is neither puff pastry nor an éclair: its texture is that of an enriched egg-and-fat sweet bread, light yet substantial.

Variations

Egg cream is the classic filling, though other sweet creams are used. Nevão de Cherovia, promoted since 2018, replaces or enriches the filling with cream made from Covilhã's emblematic parsnip.

History

The municipal tourism office presents Nevão as a Covilhã regional product and links its white sugar covering to the snow associated with Serra da Estrela. The sources reviewed do not date the recipe's exact origin, but local pastry shops make it daily and dictionaries record it as a Covilhã specialty.

Since 2018 the municipality has shared a giant Nevão with the community at the opening of its Christmas arts programme. That first edition brought together several bakeries to make roughly 60 metres of pastry enriched with parsnip cream. The variation was also nominated for the 2019 Seven Wonders of Portuguese Sweets; later public editions alternated parsnip and egg-cream fillings.
