Gadanhas de Estremoz are small individual almond-and-egg cakes. They sit in low paper cases, with a smooth or gently domed top toasted to an amber-gold colour, and a compact, soft, moist crumb.
The complete formula remains with the bakeries that make them. Public sources consistently identify the two defining ingredients—almonds and eggs—and bakery photographs show both plain-topped versions and examples finished with a few pine nuts or slivers of nut.
