Fidalgo de Cherovia is a long, rectangular individual puff pastry with folded ends and a raised central ridge. Its thin, brittle layers bake to a deep gold; inside is a soft, sweet parsnip filling. A light dusting of powdered sugar finishes the pastry.

Covilhã municipality announced Fidalgo de Cherovia at the tenth Cherovia Festival in September 2017. Padaria da Ramalha's creation won first prize in the festival's professional category. In 2018 it was featured by RDP Internacional's Portuguese Confectionery programme, and in 2019 it reached the national list of 140 Seven Wonders of Portuguese Sweets candidates. The municipal tourism office still presents it as a regional Covilhã product.
