D. Sancho is a half-moon pastry made from rustic brown rye puff pastry. The fold is deliberately open: silky yellow egg cream enriched with Serra da Estrela cheese remains visible at both ends and along the inner curve. A light dusting of powdered sugar contrasts with the dark pastry.
Rye recalls the mountain's cereal tradition and gives the pastry a toastier character than conventional wheat puff pastry. The cheese does not make the filling savoury; it contributes a gentle dairy tang within the sweetness of the yolks.

This is a contemporary Guarda creation associated with Pastelaria Cristal 98 and documented since 2014. Its name honours King Sancho I, founder of the city, while its composition brings together two regional identifiers: rye and Serra da Estrela cheese. Central Portugal tourism sources explicitly present it as a modern sweet representing Guarda.
In 2019 it became one of Guarda district's seven Seven Wonders of Portuguese Sweets finalists in the Innovation category. The entry described rye puff pastry and egg cream with a hint of mountain cheese.
