Cavacas de Viseu are large, irregular hollow cakes that expand freely in the oven without moulds. A dough of eggs, flour and olive oil forms sturdy walls and a deep cavity; after baking it receives white sugar syrup inside and out.
Their shape resembles a warped bowl with a high asymmetric rim. This structure allowed festival-goers to fill one with wine, pass it between companions and finally eat the moistened vessel.

Cavaca belongs to the pilgrim-fair confectionery of the Viseu region. Regional tourism sources document both its mould-free baking and the communal custom of drinking wine from the hollow. It should not be confused with Cavacas de Resende, normally cut into slices and covered with two syrups.
