Cavacas de Luso are round dry cakes with a firm shell and a highly aerated interior. Unlike many Portuguese cavacas, their dough relies chiefly on egg whites, with only a smaller share of whole eggs, plus flour, olive oil and salt. It bakes in small shallow round moulds until risen and golden.

Once cool, each cavaca is dipped in a concentrated sugar-and-water syrup. As it dries, the glaze leaves white patches and veins across the irregular surface while preserving the large central cavity created in the oven.

Height, cavity size and the white glaze pattern vary naturally; the reference recipe prioritises whites with a smaller proportion of whole eggs.

History

The Coimbra Region Gastronomic Charter and Mealhada's municipal guide record the tradition that the cavacas reached Luso more than a century ago through Dona Celeste's god-aunt, a nun at Lorvão Monastery. The recipe passed orally between generations and remained linked to the same shop that makes Caramujos de Luso.

Their heavy reliance on whites is explained as a way to use those left over from the caramujos's yolk filling. In 2019, Mealhada municipality entered Cavacas de Luso in the Seven Wonders of Portuguese Sweets competition as a dry cake.
