Cartucho de Aveiro is a cylindrical pastry whose outer wall is made from sponge-cake trimmings kneaded with cocoa and sugar syrup. The dark, pliable paste is rolled into a tube, creating an edible container filled with ovos-moles, a small square of sponge and whipped cream on top.

In the version known as Cartucho de Fios de Ovos, a nest of golden egg threads completes the crown. Some shops dip the exterior in chocolate and add a crystallised cherry; others preserve the plain cocoa-paste finish. The pastry contrasts a dense exterior with moist yolk cream, light sponge and fresh whipped cream.

It should not be confused with the almond cartucho of Cernache do Bonjardim, an oven-baked sweet with a flour, butter and egg case and almond filling. They share a name and silhouette, but not their dough, technique or origin.

History

Cartuchos de Aveiro first appeared in the late 1960s at Pastelaria Ramos. Their cylindrical shape and filling recalled the paper cartridges once used by grocery shops to package goods, giving the new cake its name.

The recipe also represents a classic pastry-making practice of reuse: clean sponge-cake trimmings return to the bench, are bound with cocoa and syrup, and become an entirely new structure. The original shop later changed its name to Pastelaria Avenida, while other pastry shops reproduced the cartucho and pyramid family with their own finishes.
