Bolos de Pinhão from Alcácer do Sal are small dry confections made almost entirely from shelled Mediterranean stone-pine nuts and sugar. Despite the word bolo, they contain no cake batter: whole pine nuts cook with sugar and water until the syrup reaches the proper stage, then spoonfuls are placed as small mounds on a water-wet table. As they spread and dry very briefly, they form thin discs that the source compares to a communion wafer. They must be lifted immediately before they stick.

They are distinct from Alcácer's pinhoada. Traditional pinhoada uses honey and forms a brown slab cut into diamonds; these sweets use sugar syrup and remain as individual rounds. The Gastronomic Charter does not record edible wafer as an ingredient.

Variations

The traditional source does not quantify the syrup or mound size. The same local tradition includes pine-nut cups or boats, pine-nut tart and honey-based pinhoada, but these are distinct forms and recipes.

History

Stone pine and its nuts shape the landscape, economy and table of Alcácer do Sal. UNAC identifies pinhoadas and bolos de pinhão as traditional sweets of the region, while the Alentejo Gastronomic Charter preserves the minimalist pine-nut, sugar and water formula. Alcácer do Sal municipality lists local confectioners who continue to make bolos and copos de pinhão. In 2019, Bolos de Pinhão represented the municipality in the Biscuits and Dry Cakes category among the 420 nominees for Portugal's Seven Wonders of Sweets.
