The formula published by Cascais FoodLab presents a raised dough containing flour, butter, brown sugar, honey, cinnamon, fennel, nutmeg, lemon, raisins and eggs. It is divided into small balls, brushed with egg yolk, sprinkled with sugar and baked at 200°C / 392°F.
The card is valuable but not technically complete: it lists butter and honey without saying at which step they are incorporated, and directs sprinkling with sugar without quantifying that portion. Our bilingual recipe reproduces the gap instead of inventing a repair.

Cascais FoodLab places Bolo Santoro within Pão-por-Deus on 1 November. The municipal source distinguishes food-giving associated with All Saints’ Day from at least the fifteenth century from the strengthening of the appeal ‘Bread, for God’s sake’ after the 1755 earthquake.
Santoro appears today in that setting, but the source does not date the bun’s emergence; its creation date remains unknown. The general chronology of Pão-por-Deus should not be converted into an invention date for this specific recipe.
