Biscoitos de Escalhão are rustic oval cakes made with coarse, bran-flecked wheat flour, eggs, sugar, boiling olive oil, brandy and salt. Each piece is around eight to nine centimetres long and weighs 40 to 50 grams.
The toasted-yellow surface is lightly crisp and cracked, while the paler interior crumbles easily. Their oval shape comes from flattening rolls of dough before baking them in a wood-fired oven.

They have long been regarded as Escalhão's regional cakes. Their exact origin has been lost: even older residents remembered them as an established, familiar presence. Lightly sifted flour and wood-fired baking preserve their deliberately rural character. Casa da Freguesia de Escalhão identifies them within the parish's gastronomic heritage and calls them especially renowned and unique in Portugal; this community claim confirms the territorial association, not legal exclusivity.
