Biscoitos Académicos are shaped as small golden books, with a fine, crumbly dough enclosing a layer of peach preserve. Flour, eggs, sugar, butter and lemon zest form the biscuit; the preserve adds moisture, fruity acidity and an amber colour when cut.

The book shape does not reproduce a form described in 1902—the original did not specify one. It was designed in the twenty-first century to make the recipe's literary source and University of Coimbra connection visible.

History

The recipe for “biscoitos académicos” was found in the cookbook Cosinha Portugueza, whose second edition dates to 1902, during research led by Carmen Soares at the University of Coimbra. The reinterpretation was unveiled in May 2018 through a partnership between the University and Vasco da Gama pastry shops.

Its peach filling connects that formula with a preserve mentioned in the 1727 Coimbra manuscript Suplício dos Doces. The University registered the name and Vasco da Gama took on production, turning food-heritage research into a documented contemporary sweet.
