Biscoito de Azeite Mondegão is a substantial dry cake shaped by hand into small irregular mounds, sometimes almost triangular. Its crust is deep golden brown, rugged and strongly cracked; the firm yet porous interior is pale yellow and breaks into coarse crumbs. This is neither the usual thin olive-oil ring nor a flat broa: each piece has real height and almost fills the palm.
The recipe combines eggs, sugar, lemon, flour and Mondegão olive oil. The oil produced in Nelas gives the biscuit its territorial name and replaces solid fat, contributing a fruity aroma without turning the dough into a moist cake. The finished biscuit rewards a firm bite and naturally suits coffee or Dão wine.

Moderately sweet, dry and crisp at the crust, with a firm egg-rich crumb, citrus lift and a fruity, faintly peppery olive-oil finish.
Hand shaping produces round, triangular or more asymmetric pieces, and the crust opens differently in every batch. Mondegão olive oil is the constant; ring-shaped olive-oil biscuits from other regions belong to related traditions but are not this Nelas recipe.

Isabel Paula of Nelas's Bem-Haja restaurant explains that she recovered the recipe from her grandmother. She remembers the little olive-oil biscuit kept in a jar or tin as a familiar presence in Beira households and turned that domestic memory into a local speciality identified with a Nelas olive-oil brand more than a century old.
Under the name Biscoito Mondegão, the recipe was nominated for the Seven Wonders of Portuguese Sweets in 2019 in the Biscuits and Dry Cakes category and passed several stages of the competition. Nelas Municipality continues to feature it in territorial promotions: in 2024 and 2025 it organized tastings and workshops describing Mondegão olive oil as the leading ingredient in these traditional biscuits.
