Portuguese Chocolate Salami
A chilled roll of chocolate and Maria biscuits, shaped so each slice resembles the marbling of salami. This representative formula follows published Portuguese recipes that agree on a base of butter, sugar, egg, drinking chocolate and biscuit pieces; it is not baked.

Ingredients
- 200 g Maria biscuits
- 100 g Softened butter
- 100 g Sugar
- 1 Pasteurized egg
- 150 g Drinking chocolate powder
- as needed Icing sugar for the outside (optional)
Method
Break the Maria biscuits by hand into small, irregular pieces. Do not reduce them all to crumbs: the pale fragments create the characteristic sliced appearance.
Beat the softened butter with the sugar until evenly creamed. Add the pasteurized egg and beat until fully incorporated.
Add the drinking chocolate powder and mix until no pale streaks remain. Fold in the biscuits, distributing the pieces without crushing them.
Place the mixture on a sheet of baking parchment. Compress and shape it into a firm cylinder, using the paper to roll it and twist the ends.
Refrigerate for at least 3 hours, until firm all the way through. For additional protection, wrap the parchment-covered roll in foil or place it in a sealed container.
For the appearance of cured salami, unwrap and lightly coat the outside with icing sugar. Slice with a sharp knife and serve chilled.
