Bolo de Arroz — Yämmi Version

This Yämmi/Continente formula uses rice flour, butter, eggs, milk and lemon in paper-lined individual moulds. It matches the pastry-shop cake documented in the entry but remains an attributed machine version, not a universal formula.

Bolo de Arroz — Yämmi Version, ready to serve

Ingredients

  • 150 g / 5.3 oz Butter
  • 300 g / 10.6 oz Sugar
  • 5 Eggs
  • 60 g / 2.1 oz Milk
  • 125 g / 4.4 oz Rice flour
  • 5 g / 0.18 oz Baking powder
  • from 1/2 lemon Lemon zest

Method

  1. Heat the oven to 180°C / 350°F.

  2. In the Yämmi, mix the butter and sugar for 2 minutes at speed 2.

  3. Run for 2 minutes at speed 3, adding the eggs one at a time through the lid opening.

  4. Add the milk, rice flour, baking powder and zest; mix for 4 minutes at speed 4.

  5. Divide among moulds or rings lined with baking-paper strips, filling three-quarters full.

  6. Bake for about 15 minutes and check with a skewer before removing.
