Traditional Queques — Lemon Version, ready to serve

Ingredients

  • 250 g / 8.8 oz Wheat flour
  • 200 g / 7.1 oz Sugar
  • 100 g / 3.5 oz Butter
  • 5 Large eggs
  • 100 ml / 3.4 fl oz Warm milk
  • 1 teaspoon Baking powder
  • as needed Lemon zest
  • as needed Butter and flour for the moulds

Method

  1. Heat the oven to 180°C / 350°F. Grease small queque moulds with butter and dust with flour.

  2. Cream the butter thoroughly with the sugar and lemon zest.

  3. Add the eggs one at a time, beating well after each addition.

  4. Beat in the warm milk.

  5. Combine the flour and baking powder, mix them into the batter and divide among the moulds.

  6. Bake for 25 minutes, check that they are cooked through, then unmould and leave to cool.
