Vila Velha de Ródão Nógados — Regional Recipe
Turismo Centro de Portugal published this Vila Velha de Ródão formula: a yeasted dough rich in eggs, olive oil, orange, Port and aguardente is shaped into cords, fried and coated in honey syrup. The source’s imprecise cup, glass, small-glass and sugar-to-taste measures are retained without invented conversions.

Method
Heat the olive oil with the tablespoon of honey. The source gives no temperature: do not let it become hot enough to cook the eggs when incorporated.
Break down the portion of bread dough with the twelve eggs. Gradually add the olive-oil and honey mixture, sugar, baking powder, Port, orange juice, aguardente, salt and enough flour.
Knead thoroughly and leave to rise until the dough is fully proved. The source publishes no duration, temperature or additional proofing test.
Take pieces of dough, shape them into balls and then into rolled sticks or cords.
Fry in very hot oil. The source gives no temperature, size, final colour or time.
Boil the water, honey, sugar to taste, cinnamon stick and orange peel thoroughly. Keep the syrup over low heat.
Coat the fried nógados in the hot syrup and allow them to drain before serving.
