Almeida Económicos — Historic Villages Recipe
This formula was taught by local bakers at a Historic Villages of Portugal workshop in Almeida. It uses eggs, sugar, milk, orange, spirit and olive oil; on festive days it may receive an almond. The source itself notes that the sweet is not exclusive to the region and that related biscuits in Trás-os-Montes are called azeiteiros.

Ingredients
- 12, plus egg for brushing Eggs
- 1 kg / 2 lb 3 oz, plus more for sprinkling Sugar
- 2 cups, plus a little warm milk Milk
- 2 spoonfuls; spoon size not stated Baking powder
- from 3 oranges Orange juice
- 1 glass Distilled spirit
- 2 tbsp Margarine
- 2 cups Olive oil
- 1 tsp Yeast
- about 3 kg / 6 lb 10 oz Flour
- optional; amount not stated Almonds on festive days
Method
Dissolve the baking powder in a little warm milk.
Mix all ingredients in a large bowl until homogeneous.
Use a tablespoon to portion onto baking paper. On festive days, place an almond on each biscuit.
Brush with egg, sprinkle with sugar and bake at 200–220°C / 390–430°F for about 10 minutes. Repeat in batches.
