Coquinhos — Pearl-Stage Syrup Version

Coquinhos — Pearl-Stage Syrup Version, ready to serve

Ingredients

  • 500 g / 17.6 oz Desiccated coconut
  • 350 g / 12.3 oz Sugar
  • 4 Eggs
  • 150 ml / 5.1 fl oz Water

Method

  1. Heat the oven to 180°C / 350°F.

  2. Heat the water and sugar until the syrup reaches pearl stage.

  3. Add the desiccated coconut, stir, remove from the heat and leave until lukewarm.

  4. Beat the eggs and add them in a thin stream to the lukewarm mixture, stirring continuously.

  5. Shape small balls, place them in paper cases and bake until golden.

  6. Let cool before removing from the cases and serving.
