Trutas Doces de Castro Daire are individual puff pastries cut into the shape of small fish. The oval body ends in an open tail and carries marks suggesting scales, fins and eyes; inside, the filling combines pumpkin jam with the translucent strands of gila, or fig-leaf gourd.

In the oven, the layers rise and brown around the moist filling. The result contrasts light, dry, brittle pastry with a dense, mellow squash preserve. A restrained dusting of sugar emphasises the design without hiding the trout shape.

History

The Viseu Dão Lafões Intermunicipal Community includes Trutas Doces in its official tourism guide, identifying them as a Castro Daire regional product and explicitly describing their puff pastry and double pumpkin-and-gila filling. Their shape makes a playful connection to the rivers and trout that mark the food and landscape of the Paiva and Montemuro.

The sweet is part of the output of Forno da Serra, operating since 2005, and was nominated in the Pastry category of the Seven Wonders of Portuguese Sweets. It is therefore an established contemporary regional specialty rather than an ancient convent recipe; its value lies in its local identity and figurative technique, which remain in production.
