Tecula-Meca is a small-to-medium round cake completely covered with a white glaze of sugar and egg white. Beneath it, the golden-brown interior combines eggs, sugar, almonds, butter, cinnamon and lard; historically it used Alentejo pork fat.

The opaque white coating visually separates it from golden toucinho-do-céu cakes. A cut slice reveals a dense, moist almond-and-yolk interior.

Taste & texture

Deeply almond-and-yolk rich, with cinnamon, gentle savoury fat and a dry sugar coating.

Variations

DGADR uses Tecula-Meca; Crato municipality prefers Tecolameco and also records Teco Lameco, Teculameco and Teculameca. It is related to toucinho do céu but distinguished by its white coating. Household versions dusted with cinnamon or icing sugar also circulate; this site's published recipe expressly identifies that finish as an adaptation, not an equivalent to DGADR's documented sugar-and-egg-white coating.

Where to try it

At bakeries and restaurants in Crato and Portalegre.

Pairs well with

Editorial suggestion: black tea or coffee, served in small slices.

History

It is a speciality of Crato. DGADR relates the recipe to confectionery rivalry between Bernardine and Poor Clare convents in Portalegre, a region with several toucinho-do-céu families. Crato municipality confirms the attributed conventual origin and presents as legend—not historical fact—the story of a chef who supposedly found a blank book in the castle whose only written page contained the recipe.
