Talhadas de Príncipe reuse dried Coimbra Arrufada by cutting it into thick slices, topping each generously with egg-yolk sweet and bathing it in sugar syrup. The sweet-bread base absorbs the syrup without losing all its structure, while the yolk topping produces a soft, glossy and intensely rich layer.
Arrufada contains flour, eggs, sugar, butter and yeast and is traditionally scented with cinnamon and fennel. Cut about two centimetres thick, it becomes the base for an egg sweet made with yolks, sugar and water.

The tradition is linked to the Monastery of Santa Maria de Celas and to the resourceful reuse of dried arrufadas.
Coimbra's official tourism site includes the sweet among the city's living convent heritage. The complete name ‘Talhadas de Príncipe do Mosteiro de Celas de Coimbra’ appears in QUALIFICA's national inventory of traditional products.
