Rabanadas com Mel de Barroso turn thick slices of cacete bread into a hot, golden and intensely aromatic dessert. Slightly stale bread is softened, dipped in egg and fried until its edges are crisp; the local presentation uses small round or oval slices that retain a tender crumb.
The defining element is a syrup made with Mel de Barroso PDO, dark in colour and strongly shaped by heather from the highlands. Poured over the rabanadas while hot, it forms an amber glaze and pools on the plate, adding floral, resinous and faintly bitter notes that distinguish them from versions finished only with cinnamon sugar.

Sweet and honeyed, with cinnamon and lemon, a fried crust and the dark, floral, persistent flavour of heather honey.
Some kitchens incorporate honey into the soaking syrup; others pour it over at service. Contemporary presentation in Boticas favours small, hot, crisp slices with heather-honey syrup.
At restaurants in Boticas and Barroso, including regional kitchens in Carvalhelhos, and during the municipality's gastronomic weekends.
Black tea, espresso or a small glass of Barroso honey spirit.
Boticas Municipality selected Rabanadas com Mel de Barroso as the area's representative traditional sweet for the Fins de Semana Gastronómicos programme. The dessert combines a Portuguese festive preparation with one of the territory's defining products: Mel de Barroso, whose protected designation of origin includes Boticas and whose beekeeping tradition has deep roots in local culture.
