Rabanadas à Moda de Paiva begin with cacete bread cut into wide slices. A syrup of water, sugar, lemon peel and cinnamon stick softens the crumb; each slice is then dipped in beaten egg and fried in hot oil, developing a brown, caramelised surface.

Once drained, the rabanadas are coated in cinnamon sugar. They remain compact and moist inside, with irregular, more deeply toasted edges—a deliberately simple bread dessert distinguished by the preparation published for Castelo de Paiva.
