Queijada do Torrão is a small round tart set in a thin pastry shell with deeply fluted edges. Its filling combines requeijão, eggs, sugar, butter and flour: it rises in the oven, develops an uneven golden-brown top, and keeps a moist, finely grainy cheese interior.

Pastelaria Carapinha's recipe is made by hand in Torrão. The pale, crisp shell contrasts with the rich dairy centre; it is eaten by hand at room temperature.

Ingredients
  • requeijão
  • eggs
  • sugar
  • butter
  • wheat flour
  • thin pastry
Taste & texture

Sweet, buttery and milky, with a moist requeijão centre and thin crisp edges.
