Portalegre Presunto Doce is a large convent sweet moulded to imitate a whole cured ham. A thick shell of almond marzipan mixed with chocolate surrounds a rich filling of egg-yolk sweet and gila squash preserve.
Its pale surface may be shaded to suggest the skin and cut face of cured meat, turning classic convent ingredients into a table illusion. It is served in slices, revealing the contrast between firm almond coating and moist golden centre.

In Portalegre, by order from convent-sweet specialists and at events such as the Conventual and Traditional Confectionery Fair. Its size and sculptural work make regular availability limited.

Portalegre City Council lists Presunto Doce among the specialities attributed to the Poor Clares of the Convent of Santa Clara. This recipe collection reached the Cardoso family after the religious orders were dissolved and was later taught by Judite Cardoso to a new generation of confectioners.
Food researcher Fátima Moura documented the piece made by Rosária Maroco, a pupil of Judite Cardoso, identifying its chocolate-mixed marzipan shell and egg-and-gila filling. Its trompe-l'œil form belongs to a convent tradition of creating sweets that imitate fish, cheeses, fruits and other foods.
