Poiaritos are small individual tarts from Vila Nova de Poiares. A thin pastry lines round tins and holds a filling of cinnamon-and-lemon sugar syrup, egg yolks, ground stale bread, honey, sultanas and liqueur. A short bake leaves the surface golden and caramelized.

The recipe published by the Chanfana confraternity places three sultanas in each tin before the filling. Although the ingredient list labels the outer component ‘filo pastry’, the method itself makes a dough from flour, margarine, salt and water and rolls it thin; we therefore do not replace it with commercial filo.

Taste & texture

Very sweet and yolk-rich, with cinnamon and lemon in the syrup, a bread base, notes of honey and liqueur and small fruity accents from the sultanas.

The publication identifies no historical variants. The quantity and type of liqueur remain unspecified, and ‘filo pastry’ denotes dough made within the recipe rather than ready-made commercial sheets.

History

The Coimbra Region's guide to unique places presents the Poiarito as the traditional sweet that completes a meal at the Chanfana confraternity in Vila Nova de Poiares. Regional restaurant guides also record it among the local desserts alongside tigelada.

The 2025 Cookbook and Good Nutrition Guide to the Coimbra Region publishes the formula expressly as a ‘recipe of the Chanfana confraternity’, with photography credited to the confraternity and O Confrade restaurant. These sources establish contemporary identity and practice, but provide neither a creation date nor a convent origin, so we assign none.
