Arouca's Pedras Parideiras are small, low and irregular cakes made with rye flour, walnuts, eggs, sugar, cinnamon, olive oil and yeast. A thin sugar syrup dries in pale patches over the brown surface, strengthening their stone-like appearance.

Inside, the crumb is soft and open, with a pronounced walnut flavour and notes of rye and cinnamon. Their shape and glaze freely evoke the dark nodules that detach from the Castanheira granite—the natural phenomenon known as the Pedras Parideiras, or ‘birthing stones’.

Toasted walnut and rye with restrained cinnamon, a soft crumb and a thin, very sweet sugar-glaze crust.

Size and irregular outline vary from piece to piece, as do the coverage and opacity of the glaze, while the stone-like appearance remains essential.

History

This contemporary sweet turns a geological symbol of the Serra da Freita into an edible Arouca speciality. The Castanheira geosite, within the UNESCO Arouca Global Geopark, supplied both the cake's visual reference and its name. In 2019, Pedras Parideiras appeared among the nominees for the Seven Wonders of Portuguese Sweets in the Pastry Cake category, representing Arouca.
