Pastel d’Albergaria is a small parcel of filo-like pastry, golden and crisp, gathered into tall irregular folds around a soft filling. Inside, eggs, almond, sugar and gila squash preserve form a moist, sweet paste threaded with delicate strands.
Its silhouette is essential to its identity: this is neither a tart nor a sealed half-moon turnover. The thin sheets rise like the points of gift wrapping, visibly enclosing—or albergar—the filling. A light dusting of icing sugar finishes the pastry.

Confeitaria Framboesa’s pastry team developed the sweet in Albergaria-a-Velha and publicly presented its identity in 2018. According to the producer, its shape determined the name: just as an albergaria shelters a person, the pastry wrapper shelters its filling.
The original packaging was designed as a calling card for the municipality, illustrating local landmarks and the Route of the Mills. In 2019, Pastel d’Albergaria joined the national Seven Sweet Wonders list in the Pastry Cake category. Its candidacy and continued local sale establish it as a contemporary territorial creation rather than an ancient convent recipe.
