Papas de Carolo do Rei are Rei dos Leitões restaurant's revival, in Mealhada, of a festive corn porridge associated with All Saints' Day. Carolo—cracked corn or coarse corn semolina—is cooked slowly into a thick cream, enriched with sugar, butter, citrus, cinnamon and a generous mixture of nuts and dried or crystallised fruit.

Mealhada municipality's 2019 nomination lists walnuts, pine nuts, hazelnuts, almonds, raisins, prunes, dried figs and crystallised cherries. The result is much richer and more festive than plain papas: the pale cream retains the corn's grain, while each spoonful alternates soft fruit, crunchy nuts and lemon-and-cinnamon perfume.

Variations

The 2019 nomination formula is broader, including several nuts, dried fruit, butter and spices. Lídia Ribeiro's published 2020 recipe simplifies the base to white semolina, water, milk and sugar, adding diced crystallised fruit. It should not be confused with Papas de Carolo from Alcains, which have their own page and a different communal tradition.

History

Mealhada Municipal Council entered Papas de Carolo do Rei in the 2019 Seven Wonders of Portuguese Sweets, in the Spoon Sweet category. According to the municipal presentation, Rei dos Leitões revived a regional tradition associated with All Saints' Day and turned it into a particularly rich house recipe.

In 2020, Bairrada pastry chef Lídia Ribeiro published a version of the restaurant's papas in Evasões magazine: white corn semolina cooked in water, finished with milk and sugar, then mixed with crystallised fruit. That published recipe confirms the creamy base and fruit-led presentation but does not replace the nomination's longer ingredient list; rather, it shows that versions exist even within the house kitchen.
