Soza's Papas de Abóbora are an orange cream made with menina pumpkin, flour, sugar, cinnamon, salt and fat. The pumpkin cooks in a little salted water, is puréed and returns to the heat with the remaining ingredients until the flour is fully cooked.
The texture is smooth and thick, closer to porridge than a moulded pudding. Despite the sugar and cinnamon, local tradition also serves it beside rojões or grilled sardines, combining sweet and savoury in one meal.

In Soza and Vagos municipality, the porridge was traditionally made on All Souls' Day. A custom tied to Saint Sebastian's novenas promised it to young participants; later, soldiers returning from the colonial war revived the practice with an actual serving on the final day.
