Pão-de-Ló do Porto Santo is the Golden Island's own version of Portugal's broad family of egg-rich sponge cakes. A recipe collected as part of traditional Madeiran cookery combines whole eggs and extra yolks, sugar and flour with lemon zest and sugar-cane spirit — two aromas that give it a distinct regional identity.

It is baked in a round tin lined with baking paper. The high proportion of eggs produces a yellow, light yet rich crumb beneath a delicate golden crust. The spirit does not turn it into an alcoholic cake: after baking, it contributes primarily an aromatic note alongside the fresh scent of lemon.

It is eaten plain in slices, as dessert or at teatime. It is particularly associated with the Madeiran Easter table, while also appearing at community gatherings and celebrations on Porto Santo.

Pão-de-ló has numerous regional expressions throughout Portugal, but Madeiran culinary records identify the Porto Santo version by name. An academic study of regional recipe names includes “pão-de-ló do Porto Santo” among preparations whose designation fixes a precise local origin.

The Casa do Povo de Nossa Senhora da Piedade do Porto Santo documents the preparation's continuity in a gallery devoted to “Pão de Ló e os Biscoitos”. The recipe published for the island uses eight eggs plus seven yolks for 250 grams each of sugar and flour, finished with lemon zest and sugar-cane spirit. That combination distinguishes it from better-known mainland versions while keeping it within the same sponge-cake tradition.
