Pão de Ló de Sul is the traditional speciality of the village of Sul in the municipality of São Pedro do Sul. It is presented as long rectangular cakes with a fine, moist yellow crumb beneath a brown top skin that ranges from smooth to wrinkled and has a slight sheen.
Its documented base is deliberately short: eggs, sugar and wheat flour. A recent regional food guide also lists lemon zest. It has no filling, cream or white topping—the latter belongs to the modern corn-flour adaptation served with lemon sauce.
The simple appearance conceals a lengthy artisanal process. Traditional preparation can take as long as three hours, particularly because the eggs must be prepared and incorporated carefully to create the cake's colour, lightness and structure.
