Os Turcos are a family confectionery tradition from Albergaria-a-Velha, often represented by small biscuits made from a simple, firm, golden dough. Documented rosquilhas are irregular little rings with oval holes and varying degrees of toast, visibly handmade rather than mechanically uniform.
The name does not necessarily denote one piece with a single immutable shape and formula. It also identifies a confectionery house and a family group of specialities that includes rosquilhas, raivas and yolk cakes. Open sources associate them with flour, sugar and butter but do not publish one complete, uniform formula for every variety.

Dry and crisp, buttery and moderately sweet; texture and richness vary across rosquilhas, raivas and yolk cakes.
Local references associate the name especially with rosquilhas, raivas and yolk cakes, alongside other traditional pieces made by the family. A photograph of rosquilhas therefore represents one documented form, not the entire range.

According to the account published by the No Ponto project, the biscuit recipe entered Margarida Ferreira Coutinho’s family in the late nineteenth century. Her grandmother, also named Margarida, received it from a woman in Aveiro for whom she had worked before marriage. Widowed and facing hardship, she turned that knowledge into a business that continued through four generations.
The name came from the family nickname “o turco”, associated with Margarida Coutinho’s father, and eventually identified the small specialities. The Aveiro Intermunicipal Community still highlights the “famous Turcos” in its official gastronomic introduction to Albergaria-a-Velha, updated in June 2026.
