Noz is a small dense round sweet whose essential composition is egg yolk, sugar and walnut. Fabrico Próprio’s visual record shows a cylindrical counter presentation coated in dark chocolate with an opening on top revealing the golden interior.
Its texture is moist and concentrated, quite unlike a sponge cake or a walnut-shaped bonbon. The nut gives body and slight bitterness to the richness of yolk and syrup.

- Chocolate in the coated presentation
Rich very sweet yolk, earthy walnut and a bitter contrast when coated in dark chocolate.
The yolk, sugar and walnut core is the documented reference; coating and finish may vary by shop and between the Sintra and Cascais traditions.
Look for the names Noz de Sintra and Noz de Cascais in pastry shops in both towns. Do not automatically equate it with Noz Dourada or Nozes Douradas de Galamares, which may identify distinct specialities.
A short espresso.
It is known both as Noz de Sintra and Noz de Cascais. The two towns west of Lisbon dispute its origin, while Cascais tradition also describes it as a sweet associated with the local elite.
The source neither resolves the dispute nor provides an inventor or date. This entry therefore preserves both names equally instead of turning a competing tradition into certainty.
