Nógado de Arronches appears as small, thick, irregular discs formed from fragments and strands of fried dough bound by a glossy honey syrup. Its surface is lacy and highly textured, alternating pale crisp dough with stickier, more caramelised amber areas.
This Alentejo family is neither white nougat nor the almond-based Algarve nógado. A flour-and-egg dough is flavoured, fried, broken or cut, then joined with honey. The Arronches candidature photograph confirms the individual rounded form; the maker's exact proportions were not published.

Nógado is widespread in Alentejo, with an especially documented presence in Vimieiro, Elvas, Estremoz and Portalegre and old references to 'Nógados do Alentejo'. Recipes and festive seasons change from town to town: Carnival in some places, Christmas or Saint John's Day in others.
In Arronches, the municipal council and Padaria Arguelles entered chef Luca Arguelles's Nógado in the 2019 Seven Wonders of Portuguese Sweets. It was validated among the 420 nominees and reached Portalegre district's seven-product selection in the Festive Sweets category. The candidature documents a specific local expression within a broader Alentejo tradition.
